A Greek salad is a twist on a traditional tossed green salad that usually includes green peppers, olives, cucumber, red onion, tomato, and feta cheese. Today’s recipe’s inclusion of these ingredients is a healthy way to punch up the nutrition of your diet by adding key vitamins and minerals to your well-being. In addition to the ingredients mentioned above, this recipe calls for avocado. The use of avocado isn’t considered traditional but it sure makes a tasty addition to this salad. Make sure not to use one that is too soft or it will get mashed up when you mix all of the ingredients together.

All you need to do is chop a variety of fresh Mediterranean veggies and olives as well as prepare a simple dressing, and add feta cheese. In no time, you too can enjoy this vibrant and healthy salad. It is a breeze to prepare and makes for a wonderful side dish or main meal.
The Ingredients
Greek Salad Dressing:
6 Tablespoons Olive Oil
1 1/2 Tablespoon Fresh Lemon Juice
1 Tablespoon Red Wine Vinegar
1 1/2 Teaspoon Minced Garlic (1 Large Clove)
1 1/2 Tablespoon Finely Minced Fresh Parsley
1 Teaspoon Dried Oregano
3/4 Teaspoon Honey
Salt to Taste
Salad:
4 Medium Roma Tomatoes, Diced (10 Ounces)
1 Medium English Cucumber, Optionally Peeled and Sliced into Half-Moons
1/2 Small Red Onion, Thinly Sliced or Diced, Rinsed and Drained
1 Small Green or Yellow Bell Pepper, Seeds and Ribs Removed, Chopped
3/4 Cup Kalamata or Black Olives, Drained and Sliced
4 Ounces Crumbled Feta Cheese (About 1 Cup)
1 Medium Avocado (Not Too Soft), Diced
Step-by-Step Instructions
Making the Dressing
In a small mixing bowl, add all of the dressing ingredients and whisk well to blend. Season with salt to taste and store in the refrigerator until ready to use.
Combining the Vegetables, Olives, & Feta Cheese
Add tomatoes, cucumber, onion, bell pepper, olives, avocado, and feta to a bowl.
Adding the Dressing
Drizzle the dressing over top of the vegetables and feta cheese. Next, gently toss to evenly coat. In order to enjoy your salad as fresh and crisp as possible, make sure to add the dressing right before serving.
